Ingredients
- Johnsonville Beddar with Cheddar Smoked Sausage – I love using these cheesy sausages. They are packed with flavor and a perfect protein to pair with veggies. I occasionally use the smoked sausages with cheese and jalapenos to add a little kick – also very delicious!
- Bell Peppers – you can use green, red, yellow, or orange bell peppers. For this recipe I used orange and red in order to add color to my dish. Bell peppers are packed with vitamins and minerals – particularly vitamin C.
- Onions – I don’t like a strong onion flavor, so I generally use sweet onions.
- Sweet Potatoes – sweet potatoes or plain potatoes work well with this recipe. Sweet potatoes in particular are rich in vitamins, minerals and antioxidants to help fight inflations. I love using sweet potatoes in the fall because it gives the dish a sweet fall look and taste.
- Avocado Oil – Really any oil can be used here, but I highly recommend avocado oil. Avocado oil is rich in healthy fats, nutrients, and antioxidants. It also has a really neutral taste and I smoke point making it extremely versatile for most cooking applications.
Easy Sheet Pan Dinner Prep
First you need to wash and chop your peppers, onions, and potatoes. For this particular recipe I used sweet potatoes, but plain potatoes are also really good. I chopped the pepper, onion, and potatoes into about 1 inch pieces. It will take the potatoes longer to cook than the peppers and onions, so you can get away with smaller potato pieces and larger peppers and onions.
Next, cover a large sheet pan with tin foil and coat with Avocado oil. Spread the chopped vegetables evenly across the pan, then pour over a little more Avocado oil.
Now it’s time to cut up the sausages. I usually cut them into about 1/2-1/4 inch thick rounds. I line the sausages up and cut them all at once to save time. Once the sausages are cut like you want them, spread them out onto the pan as well.
You can add a little bit of salt and pepper to the veggies if you want. The sausages are already seasoned, so I wouldn’t add any salt and pepper to them, nor would I add much to the entire dish.
Now it’s time to bake! Add your sheet pan to a 425 degree oven for about 30 minutes, flipping the ingredients half way through.
All the prep only takes about 10 minutes, and it is definitely something you could do before hand as well. This is a great 30 minute dinner recipe that is healthy and delicious!
